Ingredients
- 2 c old fashioned oats (not quick cooking)
- 2 c (or one package) craisins
- 1 tbsp. ground cinnamon
- 1/2 c organic honey
- 2 c shredded, unsweetened coconut
- 1 cup nuts of your choice (optional)
Instructions
- Preheat oven to 325 degrees F. In a large mixing bowl combine oats, cinnamon, honey, coconut, and nuts (if desired). Stir until ingredients are well mixed, then spread evenly on a baking sheet lined with parchment paper. The consistency should allow for oats to be spread on the baking sheet evenly. Bake for 30 minutes, stirring the oats every 10 minutes to prevent burning. After oats have cooled, add the craisins. Store the cooled mixture in an air tight container. Serving options: as a snack, with yogurt, or on salads as a topping.
