Sweet dates, savory herbed goat cheese, and salty prosciutto come together to create an amazing flavor combo in this easy-peasy appetizer! Mark this one down for your upcoming holiday gathering. They’ll be gone in a flash, and no one will know they only took you 20 minutes to throw together!
For this recipe, I used pitted dates, so I didn’t have to spend time removing the pits prior to stuffing. I loved the savory flavor from adding the minced shallot, but if you’re not a shallot fan, just leave them out! The rosemary and thyme will provide plenty of flavor on their own. If you’re using dried herbs instead of fresh, just use half the recommended amount (in this case, 1/2 teaspoon of each).
I’ve found over the years that the easiest way to cut prosciutto is with some nice, sharp kitchen shears. You can find my favorite pair here. Just stack up all the prosciutto slices and cut the prosciutto lengthwise into one inch strips. They’ll crisp up so beautifully in the oven and will add some nice texture to the dates! I did test some dates without the prosciutto for my vegetarian friends, and can confidently say the stuffed dates are still delicious and party-worthy. Use whatever variation of the recipe suits you!
