Citrus, beets and fennel – you might think the individual ingredients are too individually bold to work well together, but in reality, when paired together, they balance each other out so well! The acid from the citrus helps to balance out the sweetness of the beets. I love this recipe from The Splendid Table that also incorporates fennel. Fennel helps to brighten the beet flavor.
Roasting beets is so easy, you just peel, top with salt and pepper, wrap in tinfoil, and cook at 375 degrees until soft, which is usually around 30 minutes or so. However, you may want to wear gloves to avoid red stained fingers!
This is also great served as a starter for your guests, or add grilled salmon, chicken, or some pepitas to make a balanced and healthy entree! We prepped our salads ahead of time and took them as lunch for the week, and they just got better and better each day.
