It’s Valentine’s week — the week of LOVE — and no food is more fitting to celebrate than beets. (Besides maybe sweets, but that’s another topic.) Beets can be a polarizing food. Some people love them, and some people think they taste too “earthy.” I’m personally all in for beets. Love them LOTS. Which is why I was so pumped last year when Blue Apron sent me the recipe and ingredients to make this delicious beet fettuccine. I’ve tweaked it just a bit, using linguine instead of fettuccine, and removing the butter and fromage blanc to make the recipe more accessible. I’ve also doubled the Swiss chard so you can feel good about your pasta dinner!
