It’s that time of year! Time to dust off the crock pot and whip up some easy recipes. While I always associate the crock pot with cold weather, I do live in Atlanta and even though it’s officially Fall, it’s definitely NOT cold. I’m not sure why I don’t use the crock pot year round though! Not only is it the easiest way to meal prep, it’s a great way to cut down on heat in the kitchen!
I usually think of hearty thick soups when I think of crock pot meals, which is probably why I only use it in the fall/winter months. But like I mentioned, it’s a warm October in Atlanta, so I wanted to make something a little lighter. White Chicken Chili seemed like the perfect fit.
I have been really trying to meal prep recently and this was the easiest Sunday I’ve had yet. It took me about 15 minutes to prep the food for the crock pot and then 6 hours later, viola! 8 Servings of delicious, light, gluten-free, dairy free White Chicken Chili. The trick to this healthy recipe is adding 1 can of pureed white beans. This adds that thick texture you expect in a chili, without using flour or cream! Plus the beans add fiber which is essential to a healthy gut!
