Ingredients
- Eggs, Egg Beaters, or just egg whites
- Pre-cooked ground turkey
- Diced zuchinni
- Diced mushrooms
- Diced tomatoes
- Cheddar cheese (optional)
Instructions
- Preheat oven to 350 degrees F. Spray muffin cups with non-stick spray.
- Drop desired amount of ground turkey & chopped veggies into each muffin tin.
- If using eggs rather than eggbeaters, crack eggs and whisk. Pour whisked egg or Eggbeaters into each muffin tin to cover turkey & veggies. Do not overfill, as the eggs will rise while cooking.
- Sprinkle with salt & pepper. Sprinkle cheese on top if desired. Bake in pre-heated oven for 20-25 minutes. Store in an airtight container in the refrigerator for up to one week.
