Ingredients
- 3 medium sweet potatoes
- 2 cloves garlic
- 2 tbsp. non-dairy creamer (such as almond, coconut, or soy)
- 1 tbsp. local honey
Instructions
- Peel sweet potatoes and chop into 1-inch cubes. Peel the two cloves of garlic. Place sweet potato chunks and whole garlic cloves into a medium sized saucepan, with enough water to cover. Set pan on high heat and boil until the potatoes pierce easily with a fork, about 10 minutes.
- Drain the potatoes and garlic, reserving one tablespoon of the cooking liquid.
- Return potatoes, garlic, and liquid to the pan. Add non-dairy creamer, honey, and a pinch of salt and pepper. Mash to desired consistency, or whip with a mixer. Serve warm, sprinkled with cinnamon if desired.
