Herb Pork Loin with Wasabi Cream Sauce - Fridge to Fork

So many parties serve your traditional tenderloin with horseradish sauce, so this wasabi cream sauce is our spin on the traditional horseradish sauce.  Why not use wasabi to get that kick instead?

We highly recommend making this on a weekend and eating the leftovers throughout the week. A slice of tenderloin on a sandwich roll is bound to top your typical sad desk lunch! Yum. Mouth is watering just thinking about it!

Herb Crusted Pork Tenderloin with Wasabi Cream Sauce

Ingredients

For the Pork Tenderloin:

  • 1 1/4 lb pork tenderloin
  • olive oil
  • 1/4 c chopped fresh herbs (thyme, rosemary, basil, oregano)
  • salt and pepper to taste

For the Wasabi Cream Sauce

  • 1 c sour cream
  • 2 tbsp. freshly grated wasabi
  • Zest of one lemon
  • Juice of one lemon
  • 1 tsp. garlic powder

Instructions

To prepare the tenderloin:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a baking dish rub the pork tenderloin generously with olive oil. Coat with the chopped herbs, salt, and pepper. Let sit and marinate for 30-45 min.
  3. After marinating, turn the stove top to medium high heat and let the pan come to temperature. Sear the pork loin on each side for 5 minutes to get an outer crust.
  4. Place on a baking sheet and bake in the preheated oven for 20 min or until the internal temperature is 145 degrees Fahrenheit. Let rest prior to slicing to let some of the juices set.

To prepare the sauce:

  1. Mix all ingredients together in a bowl. Serve paired with the roasted pork tenderloin.
