Ingredients
- 1 sweet potato, peeled and grated
- 2 carrots, peeled and grated
- 1 beet, peeled and grated
- 1 egg
- 2 tbsp. almond flour
- 1/4 - 1/2 cup olive oil, for frying
- Kosher salt
Instructions
- Combine the grated root vegetables in a medium mixing bowl with egg and almond flour.
- Heat a thin layer of olive oil in nonstick pan over medium-high heat.
- Drop in heaping spoonfuls of the root vegetable mixture and flatten, pressing down with spatula. Fry until golden brown and flip carefully to the other side.
- Remove from pan onto paper-towel lined plate. Sprinkle with kosher salt.
- Continue cooking, working in small batches until all latkes are cooked. Enjoy!
