Ingredients
- 2 tbsp. Caeser dressing
- 1 tbsp. olive oil
- 1 pkg Parmesan Crusted Shake n' Bake
- 1 pt cherry or grape tomatoes, rinsed
- 1 tsp. Italian seasoning
- 1 lb chicken tenderloins, or 2 chicken breasts
Instructions
- Preheat oven to 400°F. In a medium-sized mixing bowl, mix Caeser dressing and 1 tablespoon olive oil. Set aside.
- Pour the package of Shake n' Bake coating into a separate bowl. Set aside.
- In a third bowl, toss the tomatoes with olive oil, Italian seasoning, and salt and pepper to coat.
- Cut chicken evenly into bite-sized pieces. Pat chicken dry between paper towels. Season lightly with salt and pepper.
- Add chicken pieces to the bowl with the Caeser dressing mixture, and toss until the chicken is evenly coated.
- Prepare a large baking sheet lined with aluminum foil.
- Coat the chicken pieces, a few at a time, in the Shake n' Bake coating. Transfer the chicken to one side of the baking sheet.
- Add the tomatoes to the other side of the baking sheet. Bake for 15 minutes, flipping the chicken halfway through.
