Ingredients
- 2 medium sweet potatoes, diced
- 1 large sweet potato, diced
- 1 large apple, diced
- 1 1/2 white onion, diced
- leftover or pre-cooked ground meat
- 2 organic, cage-free eggs
- olive oil
- clarified butter or ghee
- 1 tsp. dried rosemary
- salt and pepper
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Spray large jelly roll pan with coconut oil or olive oil.
- Toss diced sweet potato and white potato with a small amount of olive oil, rosemary, and salt and pepper to taste.
- Spread evenly on jelly roll pan and place in preheated oven and roast for 25-30 minutes, tossing halfway through.
- Meanwhile, heat 2 tsp ghee or clarified butter over medium-high heat in a large skillet.
- Add onion and sautée 3 minutes before adding diced apple.
- Sautée for 5 more minutes and add in leftover or pre-cooked ground meat.
- Cook over medium heat for another 3-5 minutes until warmed through. Remove from heat.
- In a nonstick pan, fry two eggs if desired.
- To plate: layer roasted potatoes, apple & meat, and top with fried egg.
