Carrots! Apples! Cabbage, Oh my! This superfood slaw is a true thing of beauty. It is crunchy and flavorful and wait — did I mention that it has barely any mayo? Sorry mayo lovers, I’m not a big fan. In fact, I tried to make this slaw entirely without mayo, but found that one to two tablespoons was the sweet spot. When omitted altogether, the slaw took on too much of the greek yogurt taste.
I have loved chopped apples in my slaw for quite some time, especially when paired with pulled pork. And a whiskey drink. And football games in the fall. But I digress. I am all about using up random veggies and leftovers in my fridge (waste not, want not, right?) and in the spirit of using every ounce of produce, I stumbled upon this delicious slaw.
I suppose this dish could also be referred to as a chopped salad, but the base is essentially a coleslaw. Cabbage + Gala apples + Carrots + Green onions are mixed with diced celery, sprouts, and greek yogurt and chia seed dressing.
I’ve eaten this more than once as my main dish, but it pairs beautifully with pulled pork, pork chops, or really anything grilled and smoky.
