I am loving the clean eating fad! I feel great when I’m eating whole, unprocessed food; however, it’s not always convenient to eat this way on the road (or in the friendly skies). As a flight attendant, I love foods that travel well and I can take with me! I do a lot of meal prep before a trip and typically I only eat foods that I have brought with me. This saves calories and money, and generally, I just feel better. But it is exhausting to always be planning, shopping, and cooking on my days off. Sometimes I just need something simple. I have found a few foods that are an easy grab and go, and snack bars are one of them!
Snacks are so necessary in my life, so it’s important I bring healthy snacks with me so I can avoid the chips or candy during those mid-day slumps! I have been on an RxBar kick recently, these bars are made from simple ingredients listed right on the front of the label! There is no sugar added and all whole ingredients. Packing in protein from nuts and egg whites, these tide me over as a snack OR a breakfast meal replacement!
These bars have inspired me to try and make my own version in the form of a protein packed energy ball! I used ingredients with no added sugar, high in protein, and lots of good fats to help curb away my cravings! I must say, I impressed myself! I love the texture and the portion, I can pop one or two in when I’m hungry between meals or before a workout! They are simple to make and this recipe makes enough to last you a couple weeks!
I used dried apricots because I love them, but really you can use whatever dried fruit you’d like! (Make sure to check the label as many dried fruits are made with refined sugar) I used dried dates for a little sweetness, coconut shreds for texture, cashews for protein, and almond flour to bind it all together. I also threw in some chia seeds as an energy booster!
Combined in a food processor or magic bullet with a little almond and vanilla extract, these Apricot Energy Balls are perfect to take with you to work or to eat before a workout! I rolled mine in shredded coconut for added texture and coconut flavor. While they are not exactly like the RX Bars I love so much, they are delish and do the trick!
