This recipe was inspired by the bacon-wrapped green bean bundles that my grandmother, Nana, makes for family gatherings. They’re usually one of my favorite things on the table — buttery, salty, sweet, and so bacon-y that you forget there are green beans in there. It sure is delicious, but no one ever said it was good for you.
This year for Thanksgiving, I decided to try whipping up a healthier paleo version of the classic southern dish. I opted for asparagus in place of green beans as they’re a bit higher in fiber and lower in carbohydrates. Oh, and also, I just LOVE asparagus 🙂
If you’re on a Whole30, just skip the Grade A maple syrup addition and make sure you stick to compliant ghee and compliant, sugar-free bacon. Wellshire farms is my personal favorite — you can find it here. FYI, for those unfamiliar with Whole30, we’re just looking for a bacon here that has no added sugar and no chemicals or preservatives, and is preferably organic. Basically, we’re looking for the most natural version of bacon you can find, and this is harder than you’d think! You can follow this link for a full list of Whole30 approved foods.
You can make a big batch of these lovelies for a dinner party, or serve them as pick-up appetizers at a party. They’re also a great option for breakfast or brunch, and pair really well with eggs. I love how versatile they are!
