Beet, Ginger, + Apple Martini


Description

A gorgeous, healthful martini made with fresh beet, apple, and ginger juice. Make this at home with a blender and a strainer!


Ingredients

Scale
  • 1 roasted beet
  • 3/4 apple, cored and quartered
  • 1 inch piece of ginger, peeled and cut into quarters
  • 10 fresh mint leaves
  • 1/2 c water
  • 3 oz simple syrup
  • 6 oz vodka
  • 1 oz fresh lime juice
  • Blend beet, apple, ginger, mint, and water together in a blender until puréed. Stop and scrape down sides of the blender as necessary.
  • Strain the purée through a mesh sieve to remove the pulp, and reserve the pulp for another use. (I like to use the pulp in smoothies or mix into yogurt.)
  • Combine the beet juice, simple syrup, and vodka in a cocktail shaker with ice. Shake well until the mixture is cold and strain into martini glasses. Add garnish of your choice.

Instructions

  1. Blend beet, apple, ginger, mint, and water together in a blender until puréed. Stop and scrape down sides of the blender as necessary.
  2. Strain the purée through a mesh sieve to remove the pulp, and reserve the pulp for another use (see notes).
  3. Combine the beet juice, simple syrup, and vodka in a cocktail shaker with ice. Shake well until the mixture is cold and strain into martini glasses. Add garnish of your choice.

Notes

  • Don’t want to waste the pulp you strained off? I like to use the pulp in smoothies or mix into yogurt.
