I’m so excited to share this roasted cauliflower spring pea salad with you! This dish can be eaten hot or served cold at a picnic. The flavors just scream summer!
Now, I’ve got to be straight up: this dish isn’t horrible for you, but it certainly doesn’t fall under our typical “healthy eats” category either. So…cue the mayo and bacon, don’t eat it every day, and…get over it! It won’t kill you to eat something this delicious every once in a while.
I’ve eaten this salad both hot and cold. It was great as hot side dish with grilled chicken, and equally delicious as a cold salad for lunch the next day. I can assure you this will be on my summer rotation. It’s a great dish to bring to BBQs or summer get-togethers.
The spring peas, bacon, red onion, dijon mustard, and fresh lemon juice all work so well together in this salad. I couldn’t stop eating it! I ate it as is, but it would also be de-lish served over some leafy greens.
