This dairy-free “creamed” kale hits all the right notes for holiday gatherings. It is creamy and comforting, with notes of nutmeg and a pinch of spice. Best of all, you don’t have to feel guilty about eating it!
If you have a vegan in the family, or are generally trying not to pack on the pounds over the holidays, this is the side dish for you. It’s so “cheesy” and delicious, your old grumpy uncle won’t even know it’s vegan.
This recipe, modified from Whole Foods’ ‘Creamed’ Kale recipe, calls for an optional 2 tablespoons of nutritional yeast. If you’re not familiar with nutritional yeast, never fear. It’s a commonly used vegan alternative that provides nutty, cheesy flavor to dishes without the extra calories (or the dairy). If you want to learn more about nutritional yeast, check out this article from bon appétit, in which they charmingly refer to nutritional yeast as “Nature’s Cheeto Dust.” Ha!

Really good!! I included the nutritional yeast because I was wanting the “cheesy” flavor! Added white pepper instead of pepper flakes due to nightshades. I was looking for a creamy/cheesy recipe for kale I had on hand….THIS IS IT! Added some prepped ground grass fed beef and called it an easy meal!
