A lighter Thanksgiving side with all the candy-sweet flavor of traditional sweet potato casserole! These whipped sweet potatoes are on the table in under 30 minutes, and have no refined sugar, dairy, or butter added!
Dicing the sweet potatoes into 1 inch cubes allows for a quick cooking time, and boiling garlic in with the potatoes adds a lot of flavor. I used 2 tablespoons of coconut creamer when mashing up my sweet potatoes, but if you don’t have any non-dairy creamer on hand, you could use milk or a milk alternative. You may find that the sweet potatoes are naturally sweet enough without any added honey. Taste and see!
I enjoyed my sweet potatoes topped with dried cranberries and chopped pecans. Walnuts and dried coconut would also be great mixed in.
