A one-sheet, kid-friendly dinner that takes 30 minutes to whip up? Sold! Bite-sized chicken nuggets may be for kids, but let’s be honest, we love them too. You can dish this dinner out to the kiddos as is, and plate up the rest for yourself over a bed of greens. A nice, balanced dinner, with very little clean up.
This recipe came about in the cheap-o way that many of our new recipes evolve: the $1 bin at the grocery. I’m strolling along, attempting to stick to the perimeter of the store (you know, where the fresh produce and meat are located), and bam! $1 Bin. I’m not big on processed food, but I also love a good deal. Shake n’ Bake? Hmm. Although I’m sure I had some Shake n’ Bake dinners as a kid, I’d never bought the product myself. But Parmesan Crusted chicken sounded pretty good…and not that different than the panko + parmesan coated chicken tenders I like to make myself. So into the cart it went.
As I was also coming up on an apartment move, I was itching to clear out the condiments in my fridge. A few tablespoons of Caesar dressing later, and this recipe was born. I ate half of the recipe for dinner, and threw the rest on top of some fresh spinach for lunch the following day. You could also plate this up with some fresh green beans to add some crunch.
