Ingredients
- 1 pkg coleslaw mix, or thinly sliced green cabbage
- 2 large gala apples
- 2 green onions, sliced
- matchstick carrots, if not using coleslaw mix
- 1 handful alfalfa or broccoli sprouts
- 4 oz plain nonfat greek yogurt
- 2 tbsp. mayonnaise
- 1/8 c apple cider vinegar (preferably Bragg's organic)
- 2 tbsp. chia seeds
- 1 stalks celery
Instructions
- Finely chop green cabbage if not using pre-chopped coleslaw mix. Core and chop the two gala apples and toss into the bowl with the cabbage. Dice 1-2 stalks of celery. Slice as much green onion as you like. I typically slice 2-3 stalks for this recipe. If there are not carrots in the coleslaw mix, or you used fresh green cabbage as your base, add in one or two handfuls of matchstick carrots. You may want to chop them up a bit before adding to the mix. Add one large handful of sprouts. The sprouts will wilt once mixed with the dressing, so you can add more than you think looks reasonable at this time.
- In a separate bowl, mix together the 4 ounces of plain greek yogurt, mayonnaise, and apple cider to thin the dressing out. Mix in 2 heaping tablespoons of chia seeds. Whisk until well combined and pour the dressing over the chopped salad. Stir to lightly coat the vegetables. Enjoy!
