Ingredients
- 1/4 c unsweetened dried apricots (or other dried fruit of your choice)
- 1/4 c unsweetened dried dates, pitted
- 1/4 c roasted unsalted cashews
- 2 tbsp. almond flour
- 2 tbsp. unsweetened shredded coconut
- 2 tbsp. chia seeds
- 1 tbsp. water
- 1/2 tsp. almond extract
- 1 tbsp. vanilla extract
Instructions
- Blend all the ingredients on a food processor until fairly smooth, it will become doughy.
- Roll into 1” balls and set aside.
- Roll the sticky balls in shredded flakes and refrigerate for up to two weeks.
