Ingredients
Buffalo Cauliflower
- 1 head of cauliflower
- 1 tbsp. vegetable oil (or any oil you prefer)
Homemade Buffalo Sauce
- 1/2 tsp. cayenne pepper
- 1/4 tsp. smoked paprika
- 1/4 tsp. salt + pepper
- 1/4 tsp. pepper
- 1 tsp. onion powder
- 2 tbsp. distilled white vinegar
- 2 tbsp. vegetable oil (or any oil you prefer)
Creamy Gorgonzola Dressing
- 1 container (5.3oz) plain Greek yogurt
- 2 tsp. lemon juice
- 1/4 tsp. salt + pepper
- 2 tbsp. water
- 3 tbsp. crumbled gorgonzola
Instructions
- Preheat oven to 350 degrees.
- Cut cauliflower into bite sized florets.
- In a large bowl toss florets in 1 tablespoon oil and lay on a baking pan. Bake for 15 minutes.
- While cauliflower is in the oven, whisk together the ingredients for the buffalo sauce in the same large bowl.
- Remove cauliflower and toss in the sauce, lay back onto the pan a bake another 8 minutes.
- To make the creamy dipping sauce, add all ingredients together and mix with a fork to break up the gorgonzola crumbles until creamy.
- Remove cauliflower, toss in whatever sauce is left in the bowl and serve immediately with dressing. Enjoy!
