Ingredients
- 4 boneless skinless chicken breasts
- juice of one lemon
- tbsp. olive oil
- 2 cloves garlic, chopped
- 2 tbsp. fresh rosemary, chopped
- pinch of salt
- pinch of freshly cracked pepper
Instructions
- Let breasts marinate for about 20 minutes (any longer is too much). For a quick chicken dish, you can grill the breasts or broil for 5-8 minutes per side. To “dry poach” your chicken, preheat the oven to 400 degrees. Rub one side of parchment paper with butter or olive oil to prevent the paper from sticking to the chicken during cooking. Place the marinated breasts in desired baking dish. Add lemon wedges and/or fresh herbs around the chicken if desired. Cover the chicken with the parchment paper, butter or olive oil side down, tucking it in at the edges. Bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165 degrees.
