Ingredients
- 2 c edamame, shelled, defrosted
- 1/4 c mint, fresh
- 1/4 c olive oil
- 2 tbsp. tahini
- 1/2 lemon, juiced
Instructions
- Combine all ingredients in a blender and puree until desires texture.
- Tip - you may have to add more olive oil, lemon juice or tahini if the hummus is too thick for your liking.
