Ingredients
- 2 slices multigrain or wheat bread
- 1 handful arugula
- 1 tsp. mayo
- 1 tsp. lemon juice
- 1 pinch salt and pepper
- 1/2 avocado, sliced
- 1 tbsp. leftover cranberry sauce
- a few thick slices of leftover turkey
Instructions
- Toast the slices of bread until golden brown.
- While the bread is toasting, toss a handful of arugula with mayo, lemon juice, salt and pepper.
- Once the bread is toasted, smear cranberries on one slice. Place turkey on top, then stack the arugula and sliced avocado. Top with other slice of bread.
- Cut in half and enjoy the best sandwich of the year!
