- Serves: 2 sandwiches
Ingredients
- 2 green plantains, peeled and cut in half
- 1/2 c coconut or sunflower oil
- 1/2 lb ground beef
- 1 tsp. garlic powder
- salt and pepper to taste
- 2 handfuls mixed greens, or other burger toppings of your choice
- 4 tbsp. guacamole
Instructions
- Heat the oil in a large frying pan over medium heat. Place your four halves of plantain into the hot pan.
- Using tongs to help you, cook the plantains for 2-3 minutes on each side, flipping until all 4 sides are golden brown. When cooked enough, the plantain should "smash" some when you press on it.
- Remove the plantain halves from the pan and place on a cutting board. With a second cutting board or the bottom of a large frying pan, smash the plantains until they become flattened to about 1/3 of an inch thick.
- Heat a few more tablespoons of oil in the frying pan, and place the flattened plantains back into the pan. Cook on each side for 2-3 minutes again, until crispy and golden brown.
- Meanwhile, season your ground beef with the garlic powder and salt and pepper to taste. Divide into two patties, and cook in a small pan over medium-high heat to your desired doneness.
- When the plantains have crisped up on all sides, remove from the heat and drain on a paper-towel lined plate.
- Now assemble your sandwich: spread the guacamole (or spread of your choice) on the plantain, stack your burger and toppings on, and eat!
