Ingredients
- 1 tbsp. curry powder
- 1/2 tbsp. paprika
- 1/2 tbsp. chili powder
- 3 garlic cloves, minced
- 4 mint leaves, finely chopped
- 1 single serving of plain greek yogurt (I used Chobani)
- 1 lemon
- salt and pepper to taste
- 1 head of cauliflower
Instructions
- Preheat oven to 400 degrees.
- Mix curry, paprika, chili powder, garlic, mint leaves, greek yogurt, salt and pepper in a bowl. Zest the lemon and add 1/2 of the lemon's juice to the bow. Mix well using a whisk.
- Trim the caulifower head, and place on a alumin or parchment lined baking sheet.
- Using a spatula, cover cauliflower with yogurt and curry mixture. Use hands to coat evenly and get in all the nooks and cranny's of the cauliflower.
- Bake in the oven for 40-50 minutes, then broil for 10 minutes.
