Ingredients
- 1 pkg (roughly 24) Pitted Dates
- 4 oz goat cheese
- 2 tbsp. minced shallot
- 1/4 tsp. freshly cracked pepper
- 1 tsp. chopped fresh thyme
- 1 tsp. chopped fresh rosemary
- 2 oz prosciutto, cut lengthwise into 1 inch strips
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a small bowl, mix together goat cheese, minced shallot, pepper, thyme, and rosemary.
- Slice the dates open lengthwise on one side. Take care not to cut through to the other side. Spoon roughly a teaspoon of the herbed goat cheese into the date, and squeeze sides slightly to close a bit.
- Wrap the stuffed date with a strip of the prosciutto. Repeat the stuffing and wrapping with the remaining dates. Place on the baking sheet, and bake in the preheated oven for 8 minutes, until the cheese is heated through and the prosciutto is crispy. Serve warm!
