Ingredients
- 8 tomatillos, husked
- 1 c yellow onion, roughly chopped
- 1 c cilantro, roughly chopped
- 1 jalapeno, halved and seeded
- 1 serrano chili, halved and seeded
- 1 garlic clove
- 1 tbsp. olive oil - may need to add more upon blending
- salt and pepper to taste
Instructions
- Preheat oven to 350 degrees.
- Add tomatillos, jalapeno, serrano, garlic, onion to lined sheet pan. Drizzle olive oil on top of the ingredients once on the sheet pan.
- Roast in the oven for 1 hour or until tomatillos and onions are soft.
- Add roasted ingredients as well as pan juices to a food processor. Add in cilantro, salt and pepper.
- Blend until smooth in the food processor.
- Transfer to a bowl. ENJOY!
