Ingredients
- 1 lb chicken tenderloins
- 12 oz fresh brussels sprouts
- 2 fresh beets, large
- olive oil
- 1 1/2 tsp. Creole seasoning
- salt and pepper
Instructions
- Preheat oven to 425 degrees F. Line a half sheet pan with aluminum foil or parchment paper.
- Wash and trim ends off of the brussels. Slice in half. Wash the beets, trim off the stem and root, and cut into quarters. Next slice each quarter into 4 pieces.
- On one end of the sheet pan, place the brussels and beets. Toss with a bit of olive oil and salt and pepper.
- Remove chicken tenderloins from package and pat dry. Season with creole seasoning, or your favorite seasoning blend. Place on the other end of the lined baking sheet.
- Bake until the chicken has cooked through, 15-20 minutes. Halfway through, you may want to flip your vegetables if they're browning on one side.
