Ingredients
- 1 lb lean ground turkey (preferably organic)
- 1/2 c finely diced white onion
- 1/2 c finely diced celery
- 1 c finely diced mushrooms
- 1 large carrot, peeled and grated on the finest side of a box grater
- 1 tbsp. almond meal
- 1 tbsp. Whole30 approved ketchup
- 1 tbsp. coconut aminos (or Worcestershire sauce, if not eating Whole30)
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. garlic powder
Instructions
- Preheat oven to 350 degrees F. Grease 12 muffin cups liberally with olive oil or coconut oil.
- Combine all ingredients in a large mixing bowl. Using a spatula or clean hands, mix all ingredients together until fully combined.
- Spoon meatloaf mixture evenly into muffin cups.
- Bake at 350 for 30-35 minutes or until thermometer registers 165 F. Remove from oven and let cool for 10 minutes.
