Guys. Did you know that roasted radishes are delicious? Am I the only person who is just discovering this quick and easy side dish?
I’ve always loved fresh radishes chopped in my salads, as a carrier for hummus, and atop a baguette with salted butter a la the French. But until recently, I had no idea how the humble radish transforms in the oven. The flavor of the radish changes during roasting, losing some of its spicy bite and taking on a softer texture. To top it off, the color of the radishes is quite beautiful! Here I mixed some roughly chopped carrots in with the radishes both for the sake of variety and because these lovely carrots happened to be in my kitchen.
One of my favorite things about fall and winter is the excuse to make roasted root veggies as much as I want. Once the weather cools a bit more, I’ll share with you my all time favorite root vegetable roast. Until then, feast your eyes on this.
