So, what are tomatillos anyway? Tomatillos are a member of the nightshade family and are known as the “Mexican husk tomato.” They are the green, tomato-like vegetables with paper on the outside you’ve been eyeing in the produce section.
Roasting the tomatillos helps develop a deeper flavor. Pro tip: roast on a sheet pan lined with aluminum foil to save time on clean up. While the ingredients are roasting, you have time to prep another dish! This salsa can be made ahead of time, in advance of a party or a busy week. I love to make a batch at the beginning of the week to top all of my desk lunches!
