Beets, carrots, & sweet potatoes. A match made in heaven. I could seriously eat these latkes for every meal. I’m a big root veggie fan, and I love roasting big sheet pans of veggies in the oven throughout the fall, winter, and spring. Recently I had a leftover beet and some extra carrots in the fridge, and decided to try my favorite flavors in latke form.
The hardest part of this recipe? Waiting for the latkes to come out of the skillet! As with more traditional latkes, these would be delicious served with applesauce (especially this delicious homemade applesauce) and sour cream. I enjoyed them with just a sprinkle of sea salt and loved every bite!
