This sheet pan breakfast hash is the at-home breakfast of my dreams! And it comes together in a snap on one sheet pan. Perfect for breakfast with weekend guests or on family Saturday mornings.
I love this recipe for a lazy Saturday morning or a Sunday brunch. Just bust out your french press (big fan!) and you’ll feel those weekend vibes coming on!
If you’ve got guests in town, this recipe is made for you. You can dice the potatoes and onions before the guests arrive, and store them in the fridge. Then on Saturday morning, you can quickly throw the sheet pan in the oven and get back to coffee and couch time with your friends/family!
You can even cater to different egg preferences by pulling a few servings out early for those who love runny eggs, and leaving the hash to bake a bit longer for those who want a firm yolk.
A note on the sausage: I chose to use Trader Joe’s Maple Chicken Breakfast Sausage, but any breakfast sausage will work! I would recommend going for one with a bit of sweetness, like a maple or apple sausage. This will ensure that the dish has both sweet and savory components.
I recommend serving this hash with this delicious homemade ketchup, or some aioli if you’re feeling fancy.

Crispy potatoes, smokey spice, runny yolks, and a bit of sweetness comes together in this easy and gorgeous sheet pan breakfast.
Ingredients
- 1 large sweet potato, diced
- 1 russet potato, diced
- 1 small onion, diced
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 tsp smoked paprika
- 1 tsp red pepper flakes
- 1/2 tsp salt
- 4 breakfast sausage links
- 5 eggs
- 2 tbsp. sliced green onion (optional)
Instructions
- Preheat oven to 400 degrees F. Line a half sheet pan with parchment paper or aluminum foil
- Mince the garlic cloves. Spread the sweet potato, russet potato, and onion out evenly on the sheet pan.
- Toss the potatoes and onion with the olive oil, paprika, red pepper flakes, garlic, and salt.
- Bake for 20 minutes, flipping the potatoes halfway through. Meanwhile, slice the sausage into rounds.
- After 20 minutes, remove from the oven and flip the potatoes again. Add the sausage. Create wells in the potatoes for the eggs. Crack the eggs into the wells and return to the oven for an additional 7-10 minutes, depending on how firm you like your yolks.
- Remove from the oven and garnish with green onions. Serve warm.
