Strawberry Bruschetta: a simple summer appetizer that’ll be a hit at your next gathering! Last summer, I whipped this up with half of a baguette that was leftover from making panzanella. I had a few friends over for dinner, and this was gone in a flash!
The basil, strawberries, and feta work so well together. (If you aren’t a feta fan, you can use goat cheese instead.) I particularly enjoy making bruschettas like this in the summer, when my basil plants are producing like mad. The fresh herb on top really lightens things up. To me, there’s nothing more disappointing than prepping for a get together at your house, only to find yourself stuck in the kitchen all night and barely getting to interact. That’s why I love recipes like this one. You can toast the rounds ahead of time, chop the strawberries and julienne the basil, leaving only the assembly at go-time!
Final note – I’m a sucker for a brightly colored spread at a party, and this certainly fits the bill. It’s just so fun and festive, don’t you think?

Ingredients
- 1 fresh baguette, sliced into 1/2 inch rounds
- olive oil
- 1 tsp sea salt
- 2 cups strawberries, sliced or diced according to preference
- 1 oz crumbled feta cheese
- 2 tbsp fresh basil, julienned
- balsamic vinegar, for drizzling
Instructions
- Preheat oven to 400° F.
- Arrange baguette rounds in a single layer on a baking sheet. Brush the tops evenly with a light layer of olive oil, or mist evenly using a misto, or similar device.
- Sprinkle the rounds with sea salt.
- Bake until the bread is toasted and lightly golden, about 8-10 minutes.
- Top rounds with strawberries, then sprinkle with feta cheese and fresh basil. Lastly, drizzle with balsamic vinegar. You may wish to use more or less depending on your taste.
Notes
Don’t like feta? Just sub goat cheese!
