Holy guacamole, these babies are good! If you’ve ever doubted that a vegan dinner can satisfy, you haven’t tried these sweet potato black bean tacos. Even my boyfriend, who is quite the carnivore, was asking for more.
There’s so much to love about these tacos — they’re loaded with heavy-hitting superfoods like cabbage, sweet potato, black beans, avocados, and pepitas (also known as pumpkin seeds). Pile those ingredients inside of a whole-wheat tortilla like I did, and you’ll have a guilt-free dinner.
The texture of these tacos is especially great. The cabbage and pepitas provide a refreshing crunch against the beans and sweet potatoes. I’m a topping junkie, so I choose to up my texture and flavor profile by adding ALL OF THE TOPPINGS, but you can of course pick and choose. You may also want to douse your tacos in hot sauce like my BF chooses to do. Sometimes I wonder if he can even taste the food I’ve cooked…but I digress. You do you on the toppings.
If you’re looking for a no wheat option, you can ditch the tortilla and serve these tacos up in bowl format over a bed of green or red cabbage. (Can’t wait to try that myself!) Or you can try out these amazing paleo tortillas by Siete.
